Find any neighbour that have them and ask nicely. Carrots are not a rare commodity.
I personally live about one grid south of New Brodgar, if you are anywhere near you can contact me for directions and get your carrot material for free.

Try to start searching for a village around your grid. It has a mean-looking red scull icon visible on mini-map. As soon as you found village, you can ask its name and start orienting around it.

Mapping helps a lot too. You can make maps ingame using cartography skill, or there`s some tweak to Pacho client that allows you to merge maps while you travel. When you have considerable amount of your neighbourhood mapped, you can compare what you`ve got with the maps posted on forums (i personally use the ones on havenandhearth.ru), thus finding more people.

And remember, world is vast, you may have to travel far. World consists of 5x6 grid structure, each grid is 5000x5000 tiles (5000x5000 pixels on minimap).
Rivers+boats allow you to travel far more or less safely and faster than by foot.

It only takes 15-17 Exploration(that's what i found it at) and base PER(cause i just got them).

I have far, far, faaaar too many carrots so I'd happily give you some for some leather. Unless you're coincidentally very close to me it's not really worth the travel though. Are you looking for a particular quality? Mine aren't fantastic since I got bored with raising farming, but they're mainly 28-40q
