Well if you have all the skills you should be able to at least find Chantrelles or Cavebulbs. In my experience those sell for quite a lot and are relatively easy to acquire. For people with no incrementable skills, the most valuable things you could make would be Bricks, Linen, or Silk, really in order of most acquirable to least acquirable. Silk you can only really make on weekends or when you're not working due to its timeframe, and Linen first requires flax seeds and a loom. Bricks you just need clay, which can be dug out of any riverbed (although islands seem to yield the most deposits) but you need to first find a deposit, but I would still go for bricks since Silk is a pain and linen is very time consuming.
I'd buy the linen and silk though.
EDIT: Also, I'd trade metal for rabbit hides if you have a few dozen of them. A new lazy spurt between me and my friends as well as my nomadic neighbors has resulted in a lack of hides in my settlement.
