Not everyone has Tahitian vanilla around, also; If you plan to let it sit, which is what this recipe is for, you need to use imitation, because it doesn't spoil.

Actually if you use a proper aged vanilla, traditional style not what stores pass off nowdays, in a recipe it can last up to six months before turning bitter. True vanilla extract has a rather high alcohol content and is subject to some countries import laws.

It is usually secondary ingredients tha twill go bad first of spark a reaction with vanilla. ie. cream...
