Spread Carrots?

So far I have only pulled up 1 carrot per tile. Is there a special requirement for expanding a carrot crop, or am I just getting unlucky?

Wait a little longer before you harvest them.
In the first state that you may harvest them, they yield 1 carrot.
In the second, 1 carrot and 1 unit of seeds.
In the third, 2 carrots.

So if I have all full grown carrots I have to trade to get some seeds?

You can plant carrots as well, in addition to eating them.

second stage is easy to spot. there's white stuff all over the crops. just wait till that's gone to get more carrots. harvest if you want to expand your farm.
