Points are just what they sound like. Since they're no practical in-game currency, traders assign things a point value, a price or value if you will. Thus, a quantity of item A is worth so many points, and will trade for item B, just like your example of pearls for a high quality herbalist table.
Trade with people with good reputations on the forums. You can trade with people that you have met in-game, but as you've seen, it does have its risks. When trading with villages, you'll need a village idol yourself. Make an alt to do the trading to protect yourself from this kind of asshattery. Smash the alt's hearth fire, or you can grind their agility really high so you have a lot of travel distance (not sure how much AgI is needed to port clear across the world, though). Give a hearth secret to the village's chieftain or lawspeaker so they can invite you to the village. You can now port to their village idol from anywhere in the world. The other village should do the same for delivering goods to you. After that, you never have to use that alt again OR you can invite that alt back into your village and bring them home.
For simple trades with locals, barter stands are nice, but there's some things they don't accept the last I checked. Also, they're not secure, so they can get stolen from, and in the current state of the world, there may be little recourse for punishing the offender.
Oh, one more thing: if you're concerned about someone porting in a murder character to your village during a trade, wall off your idol so that they can't leave the area. If they try sniping you with a bow, you can easily duck into a house and log off.
