I know there is Gold, Silver, Iron, and Tin mines.
Does every mine have all of these ores with a random chance to find them? or do I have to hope I get lucky with the one I find?

When prospecting, you're told which sort of minerals are present, which is how you know what the mine will yield. The ones thus far are completely homogeneous - one mine gives one type of metal.

And sadly, no more than this I know of a silver mine which doesn't deliver iron ore.
