
Will this grass grow more if I leave it there or do I have to convert the forest grass to dirt?

If you make a grass/forest tile into dirt and leave it, it'll have a chance of changing into moor IIRC.
If you leave it alone, it'll slowly expand if, as M So said, there are no trees, but stumps nearby. You could help expand it though. By laying grass down. (By using random seeds.)

And so if there are stumps and trees around, they won't grow?

Yes but I believe stumps are fine (I'm not sure why you would want to leave them)
Fixed Also, mooor will eventually go to heath when plowed. And yes, it spreads over time.
