Though this is true, there is no benefit to doing this over only filling the 2l Rennet and 20l Milk and coming back just as it finishes. Rather, there is now a distinct punishment in that if you're late, busy, or forget when watching a full tub, you will lose potentially 10 cheese curds. So by giving it more attention, effort, and care you get no additional bonus besides getting all of the clicking out of the way at once as opposed to spreading it out over time. This seems very silly to me though I believe my comments now belong in Critiques rather than in this thread.

I suppose you could fill tubs to the brim with milk and use rennet as the control -- only putting 2l of rennet in at a time. That seems like a huge waste of milk though.

why would it be a waste of milk? if your intent is to keep making curd, you just keep putting two jars of rennet, until you have made all the 100 curd that can be made with a full tub of milk. i never said you have to fill it to the brim its all about preference and how much milk you got i guess. if you only wanna make 10 curd then for god sake dont fill it to the max with milk , just put 10 l of milk and one jar of rennet, done. Since i usually intend to make the full amount of curd i might aswell put it all in straight away to save space in my barrels.

the reaction of curds starting to appear by the way only happens when there is rennet in there, once there is no rennet left it will stopp producing curd and any milk left in the tub will stay there until you put new rennet in, no milk is lost unless you overfill with rennet.

If you fill it to 3L the only benefit is that if you come back after it's done at least 10 curds it never 'stops', therefore you have continuous flow production.

I however am a fan of the 2L rennet + 20L milk = one day deal. I check once a day and that's all that's needed, none of that other check and catch it on time, or risk.

I used the wrong context there. I meant more in that the milk used in that tub is not going to use in the time that it sits idle in the tub waiting for the first 20 curbs to be produced so another batch can begin. Whereas just setting up extra tubs would vastly increase the speed and autonomy of the process. It is wasteful of the milk to sit idle, essentially.

indeed, for some that is the case, and for some it is not, it depends on how much milk you have acess to and how much curd you can take care of in one day.

anyway hope we inspired some more cheesemaking anyhow ;)

Yeah I could see that for sure, I get 120L/milking now, can milk twice a day. If I did 6 curding tubs that'd be a waste, I do 9 and it comes out just a little extra if I do it this way.
