(A)ttack>S(h)oot will give you a special pointer. Click the animal to start aiming. Over time the aim meter will fill. The amount it fills is based on the weapon and weapon quality as well as your marksmanship. FYI, if you're hunting for the first time, you probably wasted your time with a bow. You'll just get frustrated at waiting to aim and then constantly missing.
