How much UA would you need to with stand the initial hits of the herd? =p

The amounts would vary depending on how many swung at you and how quickly. You'd probably only need about ~160-200 UA or so as well as oak stance on to rebuild your UA as more descended upon you. The dangerous part would be if they surrounded you. It's better to just fight them smart rather than trying to brute force it.

I find that aggroing the herd using like a sling or calling down thunder than getting them to de-aggro usually make them not attack when you pull their hair. I can't completely confirm it as I might just be really lucky and I don't know of anyone else that does it. I do fence them in just in case though. So far I've gotten about 20 or so hairs and never been attacked. :D
