Something i posted on another site that may help you.
------------------------
Boat hunting tips

Always try to drive animals away from open space. Most of the time they will go the opposite direction from where they are hit. Position yourself to drive it a long a riverbed/ to an easy reachable spot by boat. If mobs are aggressive to you, you can make them follow by putting the boat against land to reposition them so they hopefully don't go to open space. At the moment they run, hit the 2 swords by there picture and sail away. This will mostly make them stop running, making it less of a hassle to get hits on them.

If you follow bears and boars on land be sure to have full stamina so you can run back. Following is risky business especially by bears.
Also put running on 3 and zoom out.

Also get a custom client, being able to hide/xray trees, rocks etc helps a lot with being able to hit mobs and zoom out. I personally like ender's client. ctrl-h= hide objext, selectable which to filter by settings ctrl-x=xray

Pre-build a trap with one way in and hugging water
Land with boat in trap, get out, shoot the animal
Wait for it to get in the trap
Sail away, break combat, wait for deaggro
Return, close the trap by building the last signpost
Get back on boat and shoot, it will not be able to run away.
