This answer should be obvious, I don't strive for the day that I own a gigantic field of flax do I?

No I do not

Someone once told me that flax fields produce bigger amounts of honey and wax. No idea if there is any truth to that seeing how bugged beehives are anyway.

Extra stage compared to flax because of the orange budding stage maybe?

Could very well be true if the bud stage is treated like any other growth of plants for bee hives essentially giving you 2 Chances to earn wax in 40 Mins...

But then hemp would produce more honey and not flax.

You could do the bee hive circle crop with hemp and flax and plant them fully to test it.

Don't think it will matter when you plant them because they'll stop giving at max stage, if anyone knows the actual % Chance to get honey/wax then you take the average of the number and test it a few times to see which crop gives more consistent results.

I may test this myself when I get to my new village and post findings.

Flax is best for low-quality fibres if you're trying to mass produce village banners. Why? It's more aesthetically pleasing and is easier to click on.

Hemp would be best if you want something with more uses. However, if you want lots of hq fibres for dolls, I would plant both flax and hemp. Just so your doll production doesn't have to suffer if you're lucky enough to catch your hemp in bud stage.

I've heard the rumours that hemp is faster than flax. I'm not sure if this is true or not, but the same people who tell me that it's faster also say it isn't THAT much faster. So either way, it doesn't matter IMO.

The big problem with flax though is that it is a lag machine when massed so unless you turn on simplified crops with a custom client, you are going to get a large hit on FPS. Otherwise, flax's main advantage is that it is less aggravating to harvest due to hemp having random sprite that sometimes (make that most of the time) goes outside its tile.
If you keep focusing on the shadow behind, you will not see the light in front of you.

Being successful isn't just about hard work and succeeding, it is also about picking yourself up when you fail.

But if all your fibre plantations were hemp I don't think it would suffer regardless of seeing them in bud stage.
