Trolls are 275+Lvl*25, or so wiki claims.

That formula doesn't make sense at all in any fashion. 175 at least fit reality. 275 is wrong.

That's 400. Lv5 Trolls cap at 300.

Elaborating on what I said earlier, I think quality could be relevant to civilization level. Being said, if you find a herd of deer below level 10, they tend to have the same quality. I've had a group of 4 with 2 being 1 quality below the other 2. It could possibly be related to civilization level, and those 2 lower in quality having spawned across the invisible line which made it 1 "point" closer to civilization, thus 1 quality lower. Of course the levels stay the same due to them being on a scale of 1 to 10, rather than 1 to 100.

Again, this is all theorizing, if anyone has any input I'd appreciate it

Mouflon and Auroch aren't always Q10. I've gotten Q15 hides from wild mouflon. I've also gotten Q8, that's with 90 survival and a Q70 axe.

Oh really? Now that is very interesting. Was there any consistency to it? Such as, in the same pack all the animals gave the same quality goods?
