Wax/honey is made randomly based on crop maturation, every time the crop matures another stage there is a chance at the creation of honey/wax. Thus faster growing crops have a higher chance of creating wax. Carrots and beetroots are superb for massing up for the sole purpose of wax/honey.

Yes, I was absently-mindedly thinking about that song when I started off, more so since of the sound of it rather than specifically due to it being a Muse song.

Nobody has to steal. They do it for a lot of reasons, but not because the have to. Most likely they're just trying to screw with you and drive you out of the area. The problem is the world is too small to completely avoid this sort of thing, so you just have to be proactive with defenses and build up a palisade as soon as possible.
