Thanks for the reminder. You're not supposed to even be able to reaggro the same animal again once you successfully use Quell the Beast on it, just like you can't "attack" a cow. I know things get buggy and the game will let you, especially if you have it penned and walk out of aggro range to deaggro the rest of a herd.

Last time it took me 5 hours to tame 4 oraches just cause I had to wait till it engaged me again.

So to clarify things. If I want to tame and animal. After useing "Quill the beast" and puting him into 20 tameness I can get him to aggro me faster and puting him to 40 by:
A. De aggro the rest of the herd and reagroing them to have the taming orach aggro me.
B. Pull his hair and have him aggro me.
C. Attack him (punch for example) and have him aggro me.

Last time I attacked the orach I lost the 20 tameness so when I finished taming the animal again I only gained 20% tameness. Wiki also directly states that you need to wait aproximently 10min untill it aggros you again.

From the wiki: http://ringofbrodgar.com/wiki/Taming
"You can then use Quell the Beast and gain 20 tameness on that particular animal (You need 100 tameness to finish taming). The animal should be following you around after the 1st use of Quell the beast and the battle will be temporarily over. DO NOT ATTACK the animal at this point or you'll lose tameness gained, wait for it to attack you instead (5~15 mins). Repeat the process 5 times to get yourself a domesticated animal."

I should put this clear. Before I wrote the post above, one of my friends has tamed a bull by aggro the herd. My friends and I have played about 2 months, so I didn't think we can discover anything that can surprise you all.

So cancelling an attack really works or not? Because I remember trying it and it didn't work back in W4.

This is how you can bug up the animal and not be able to tame at all. (Entering a house or cave resets everything, but those aren't always on hand.) Attacking the animal in any way will cause it to lose tameness!

edit: small correction

Just to clarify, you box up the animal, go through the taming process and run away until combat is ended, then go back, agro a SECOND auroch, then switch back to the original animal, do not punch it before it agress you and you'll be golden.
