High quality bricks and clay, high quality soil, high quality water, tools, metal, seeds... The basics. It also depends on what you want to make. I'd start with a high quality herb table and go from there.

Pally bashers are "just now" starting to pop up so you have a bit of leaway but i'd get on building either a brick wall or at least a brick vault around at least one house within your pallisade. Great information, thank you Tokyo! How does Auto-hearth work? Wont it get disabled if im in combat?

Thanks Dagrim! Ill aim for that herb table to start with and some bronze gear. How fast will people snipe right now? Are we talking a second or two?

Sniping is slow, max range is liek 50? tiles, so build big walls, or constantly move(drops aiming) or run into your house.
Autohearth - ender feature, when another player is close - you hearth to your fire. Requires some time and if he aggro you - it will fail. Many gankers use auto aggro bot, which works with same API as autohearth, idk what method it use, but I think its prob fast double shot(never hits, but put you in combat) or CTTD special combat move.
Boat - know your river system, check sabinati map http://sabinati.com/HavenMap and found yourself there. Never boat into dead end, never get close to another boat - they can jump on your boat and beat you there. When foraging and leave boat be very cautious and avast asap if you see another player.
Try to path with least clicks possible - massclicking slows you, I can't count times when I slowly cut away chase with better pathing than my foes.
Check how gear looks in wiki, if you see dhelm - that guy will defenitely steamroll you, bearcape - can be anybody. Look for sword/b12 in hands as well.

Any ideas on what one quality product I should start focusing on? Something thats manageable solo and people are interested in.

Silk and Pearls will always sell well. Floatsam and cheese are also excellent choices.

don't forget bears too, most shops will buy those if they need hides or have a cheese production to fuel with bear intestines
they buy em unbutchered so they can use their own survival and cutting tool
the only stats you need are like 20+ marksmanship
demand lowers lateworld when cow quality surpasses bear quality but that will be months from now

Hunting bears might have high reward, but you also gotta calculate the risk in it. Not sure if I want to rely too much on a task where I can lose weeks of work in a matter of minutes.

Just go boating around and find a bear next to the river. Keep slinging at it from your boat, perfectly safe.
