Dual wielding *was* used, but not with two swords. It was a sword and a parrying dagger. The dagger was mostly a shield replacement. While it doesn't cover a lot of area, it can easily catch the opponent's sword or even break it, and then you just kill the unarmed enemy like a true gentleman.

star wars didn't invent or popularize dual wielding

How is someone choosing to pick up two swords and fighting with them unrealistic? I'm a human being, I have TWO (count them now kids, one, two) hands, if I wanted to pick up two swords and swing them I could, maybe it is not very effective. Most games compensate by adding a penalty for hit or damage.
You are acting like it can't be done because they didn't do it back then. Does that mean your computer is impossible because they didn't have them back then?

One term for dual wielding was Florentine, and it involved (usually, but not limited to) a Main Gauche (Defensive dagger) in one hand and a sword in the other. However, that was not even close to the extent of it, as many people preferred to use Two short swords, or even once skilled enough, two full sized swords. While it offered little protection against arrows, the style was much better versus other swords, being that you could guard a sword strike with one, and attack with the other. Besides, they relied on their armor and the ability to Parry for protection anyway.
