The 2 or more tiles deep in lakes? no. Next to rivers they can still engage you unless there a tree or boulder near the edge you can get behind.

The Hitpoints goes up linearly with quality, and the AC goes up exponentially (Q40 is twice as effective as Q10, Q90 is three times...)
the X value is the "deflection" value, meaning the value which the armor piece will mitigate without anything changing (the damage gets "deflected")
the Y value is the "absorption" value, meaning the value which the armor piece will mitigate while removing this damage value from the armor's hitpoints (the damage gets "absorbed by the armor")
Example time!
Situation: Timmy has recently purchased a quality 40 bronze plate, which has 2000 hitpoints and an armor class of 200/200
Now Jimmy has a mean friend named Reginald. Reginald planned to backstab Jimmy. Luckily Jimmy bought this plate.
Reginald did a first attack, dealing only 167 damage. All 167 damage was deflected. No damage to the armor
Reginald then proceeded to do a second attack, managing to hit for 348 damage. 200 was deflected, and 148 was absorbed by the armor. The plate now lost 148 health
Reginald got lucky and somehow dealt a hit of 402 damage. 200 was deflected, 200 was absorbed, and 2 damage hit Jimmy's SHP. The plate lost 200 health, and Jimmy lost 2 SHP.
