Is lag common in this game? I am on a good connection and I lag whether I am right next to the router or across the house. The lag is very noticeable and I hope there is something I can do about it.

It's common and you can't do anything about it. Basically it boils down to H&H beeing non-comercial, work in progress. So Devs are unlikely to spend serious money for hosting where they get 0 in return.

The network connection isn't the issue. If anyone really wants to know answers, they're in the forums, but it's purely server related.

This is a more opinionated question.

Some villages I have come across have a plot system where each player gets a plot and usually all the plots are the same size. What is a decent size plot to give to people in a village?

Depends on how many villagers you have and the village size etc. I would say 15 x 15, there they will have enough space for mansion, barter stands and a little farm or something.

Okay, so chickens in crates die after 3 days, how is this set? If I log in once a day and let them run around for a bit, will they survive? or can I keep chickens inside my house without them being lost after I log out?
