No and No. In first case they'd die of starvation in second they'd just despawn once you left the house. Basiacally they need to be fed to prevent death and that can only be done via coop.

Some villages I have come across have a plot system where each player gets a plot and usually all the plots are the same size. What is a decent size plot to give to people in a village?

Depends on the size of the city, how the city will be run and how generous you feel like being.

My recommendation is somewhere between 20x20 and 50x50.

Is it possible to track an underground hearth with scents, from above ground? I have a situation right now where I am tracking a scent and I have a literal triangle of scents pointing to absolutely nothing.

What will happen to a freshly placed CP if the server resets during the dry time? Does it just resume from where it left off, or will I need to build another one?

Wine. Amount of crops needed for a full barrel per harvest.

25 grapes = 10L of grape juice right?

25x10=250

250 divided by 3 ( full nature ) = 83?

I need 83 grape crops for a full barrel per harvest?

I suck at mathematics and used a calculator. Am I completely wrong? :|

25 grapes gets you 5L, not 10... you need 2 full wine presses worth of grapes to get 10L.

so, 50 grapes for 10L... 500 grapes for 100L... 167 grape vines (assuming full nature) for a barrel of grape juice/wine.

What you can do is plant half of that and get a full barrel every 2 harvests. The time it takes for the first harvest to turn into wine is longer than it takes for the grapes to regrow. Also, since it uses the average of the grape juice already in the barrel with the new grape juice, it doesn't take that much longer. However, if you need lots of wine, you might wanna go for a full barrel each harvest.
