Requirements to make glasses and bottles in w5?

drinking wine from ready-made glass *seems* to let you discover wine and open the recipe for wine glass also.
at least my alt discovered wine from drinking the first glass my main made, IF it isnt a bug, that is.

(i think taking vinegar out of bucket should also let you make bottles since you can pour vinegar in bottles.)

yes i take vinegar out from barrel with bucket, but still cant make a bottles.

Maybe something similar to the cheesemaking mechanic, where it ages differently based on location stored. Perhaps even have it change into different varieties of wines with improved or varying effects, rather than alter the actual quality?

definitely good idea, pehaps falling short of changing types, could modify the buffs depending on age, or even when properly aged, add an FEP to it.
