This formula is for Shrewbread, is it correct? and also, does this apply to all doughs? obviously with different ingredients and amounts of ingredients depending on the food.

Flour Q + Water Q + Wax Q /4 ?

180 Flour + 42 Water + 72 Wax = 294/4 = 73

That doesn't seem right, if it's /4 then one of the ingredients would be weighted twice, there is never a division like that which would bring down the quality. Assuming you actually did this and got that output, what is your Perception and Cooking?

How do I shear sheep and/or ram? I am right clicking and there is no option. (I have waited a solid 8 hours or more, so there definitely should be able to shear)

Wait longer and make sure you have a sharp tool such as a stone axe or sword equipped. The first time always seems to take longer than any subsequent shearing though I've never tested that before.
