It varies, I think it's usually around 20 minutes, and yes you can stay in shallow water.

Next step is taming two in the same time with two ropes
Pretty easy too, and it's a lot more funny when you realize you tamed a male and female auroch who are not waiting to be at home to "rock n roll".
Though it's less fun when you see what a pregnant cow eat.
