Purely for feeding livestock, pumpkins are probably the best if you have a large herd involved. You need the large herd so you can have large pumpkin fields to guarentee you'll get the +2 pumpkin harvests to replant the field with.
Smaller herds you can feed off of beets to avoid the issue of having too small of pumpkin fields. In the short run though you can probably feed them waste seeds off flax/hemp fields if you're just getting going.
