For fishing, do the specific nodes have a higher chance of different fish, or is it a universal drop rate across all of the fishing nodes, and then different nodes have different qualities?

Also, does food quality affect the FEP, or just the hunger regained?

Fish type is determined by the terrain the node is located on (lake vs river, shallow water vs deep) and the moon phase. Hell if I can tell you how exactly it works, but the wiki has some info on it under moon cycle I think.

Food Q only affects FEP's. You'll understand why that's good later on in your life.

The wiki has a nice list of under what conditions the fish can be caught, but makes no reference to how to tell what phase of the moon it is. Is there a trick, or do I have to just figure it out based on what fish I can catch?

You can't tell the phase during the day, but if it's night, you can see the moon phase. Also, if you're not catching anything, try a worm, leech or intestines to see if there are fish there. Nodes can get fished out and not disappear.
