does this count as a hearth vault since stakes can't be destroyed and this guy has his hf in the cave?

You should be able to build a mine hole somewhere to get into that cave system.

However if it's one of those wonky caves that only go in so far (and therefore can't be mined into due to the ~30 tile no-mine zone) then yes that's a quite simple yet effective impenetrable vault.

You could also probably get away placing a minehole so that the ladder underneath is within the cave

wiki says destroying a mine support causes massive caveins, is that true if area covered by that support is covered by other supports also? for instance I had to overlap supports to get to another section of the node I was mining, can I take out middle support?

Even if an area has multiple supports covering it, destroying one mine support causes a cave in. What makes it worse is if the cave in destroys other supports, too, and if you have your supports stacked too close, it will cause a chain reaction.

if i am in a 1st lv(cave) tunnel, can i find direction of metal with rustroot of 1st lv tunnel? or do i have to do it outside?

Surface prospecting finds lvl 1 ores and so on.

Surface -> Cave/Layer 1 -> Layer 2 -> Layer 3 -> Layer 4 -> Layer 5
