Same way it works against players. Animals have something like 30% armor penetration though and so no matter how good your armor is, some damage will get through. The amount of damage will depend on the animal, the attack they use, and their level (?).

The amount blocked by the armor gets 30% penetration. So 800 damage, when blocked entirely, would hit for 240. If 600 of the 800 damage is blocked, then the animal would hit for (600 x .3) = 180, plus the 200 damage that is above the AC, resulting in 380 damage.
