Have your animals starved at all? That will lower their q. Otherwise they are in some way capped by the q of the food they have eaten (softcap, hardcap, idk). Beyond that ... anything beyond that I don't know.

they're not starving, I'm getting the right quality for each thing I'm getting. some bones were higher others were lower(range from 15 lower than meat/hide quality to 12 higher), I simply want to know if there is a way to know quality of animal bones before slaughter like you can with other parts such as the meat intestines and hides.

You ate too much. You are overstuffed. Past the green bar, there is a red bar that you do not want to fill.

Ways to remove "overstuffed": do strenuous activities like plowing, digging, etc. or regenerate SHP.

I'm asking this question: Is having just con and str food bad? That is all I'm finding to be eating.

Early on in the game it doesn't make much difference. Once you get to some fishing and farming, you'll catch everything else up fast enough. Of course, you're goals might mean that you only really want Str, Con, and maybe some Agi and Cha.

How do I find my location on the map? Is there a command to bring up x/y coordinates? I'm using Enders Client, if that makes a difference.
