I have trespassing and theft and I want to take someones nearby carrots from their field, but I can't.

Trespassing allows you to interact with objects, such as opening chests and doors.
Theft lets you take objects, such as from the ground or from containers.
Vandalism lets you remove or add static objects, such as crops or fences.

You are vandalizing a field of crops. But honestly, I wouldn't bother leaving a high mark scent like that just for some lousy carrots. Even if the area is abandoned all it takes is an exploring Ranger to see your scent, track you down, and kill you.
