you wont leave a scent if you summon someone and kill them.
when you collect a scent you are given so many of it, depending on how many scents the person left. you can only have one type of scent in your inventory at a time, so you cant say, hold trespassing scents and theft scents at the same time.
when you right click the scent you are given the option to track hearthfire or track perpetrator, and in cases of theft, track stolen object.
depending on what you choose, an arrow will flash and show you what direction to go in (like when you are using a dowsing rod) except it only flashes once, then a cooldown appears on the scent. you will need to do this every time to find out what direction to go in, and each time it uses up a scent.
if you find the hearthfire of the person you are tracking and you can see it, hold the scent of the person in your hand and right click the fire and you will get the option to force summon. if the person doesnt have a hearthfire you can force summon him anywhere by holding the scent in your hand and right clicking anywhere. if the person doesnt have a hearthfire and he started the world from a charter stone you will have to right click on the charter stone while you hold his scent in your hand.
that pretty much explains how tracking works. its very hard to get the hang of it when you first start out but the more you do it the better you get at it.
