Cattle breeding advice

My apologies if this has been addressed in another thread, but i couldn't find the answer i was looking for.

When selecting which livestock pairs to breed with, what is the effect of the various qualities of the parents on the offspring? Are all values of the calf determined by the "breeding quality" alone, or does each individual attribute average between the parents?

Do you actually need to pair them up or just petting 1 male with several females work?

uh they'll take care of business on their own as long as the male can reach the female(s)

Cows start giving milk when they give birth, which is 4.5 RL days after impregnation IIRC.
