Taming, wat do?

So here's what I understood of taming.

You read 4 guides that say the same thing;
gain initiative
sidestep to gain combat advantage
consume the flames to down the combat intensity or whatever
and then quell the beast

so far so good, now I have an aurochs following me and the '20' came up just like normal
and then- sudden death.
As in, no attacking me randomly after a while, I waited around for 1 hour and 30 minutes for an aurochs to attack me...
After which I started initiating combat with it.
After which I killed it without getting any aggro what so ever- And I had a quality 5 stone axe- imagine the time it took to down that sucker.

So my question then was- after following the first 6 pages of suggestions that say any animal should auto-attack me after 10 minutes or so and obviously not getting that to happen...
Then following the advice of a completely different guide saying I should quell one, walk around with it for a while and go back to the herd to aggro another one.
And trying to double-quell with absolutely no result in aggro or anything close to that- I could basically slaughter them in front of each others eyes.

So I guess my question is
What the hell am I doing wrong?

I have actually experienced the same problems. Ironed it out after awhile.

I use the corner post/construction sign trick to keep them organized and my armor healthy.
I find its best to Call down for 28-32 IP. Then you side step 4 times (getting the 32 IP leaves you room for another side step in case the animal gets to hit you and balance out combat advantage a bit), sting like a bee, and quell. I wield 2 ropes, so I wash rinse and repeat on the other beast.

I also try to keep my taming attempts to herds that are less then 6 in number, so you can just watch the avatars of the animal to know when they have reaggroed (You won't have to pay as much attention and not have to take damage to find out if they are angry at you again.) Now if your waiting any longer then 20 minutes your better off just killing them or restarting your client and trying again. I don't really walk them around or try to focus on any other animals during the process. When quelling two at a time they often aggro much faster so I recommend that method. Good luck! (Coincidentally I am taming some mouflon right now.)
