You need to fill a curding tub with milk and rennet. Rennet you get by cooking intestines and vinegar into clay jars at a cauldron. When you fill the tub with both, it'll slowly start producing curd. Curd can be eaten for 1 strength FEP, or you can fill a cheese tray with 4 curd. Place a full cheese tray on a cheese rack and let it sit for quite some time. It'll turn into one of the four tier 1 cheeses, depending on the location of the rack (cellar, cabin, outside and mine are relevant locations). You can further age this tier 1 cheese to get a tier 2 cheese, and so forth. No cheese above tier 4 exists, and no recipe for a tier 4 cheese is currently known (the devs left it to us to discover all the recipes). See this wiki page for recipes of cheeses discovered thus far.

You missed on how to make vinegar in the first bloody place, to make vinegar, you need to let a barrel of wine age a further week, to make wine, get yourself ALOT of grapes and toss them into a wine press, then you just have to well, PRESS them until the juice meter on the wine press interface is full, once that's done, use a bucket on the press to get 10 litres of grape juice, stick that in a barrel and let time do its thing.

Also, Rennet's teabugged, if your making more than one jar of rennet in the same inventory, drop your just-made rennet first.

you can actually lift the wine press and right click on a barrel to dump the whole thing in the barrel.

Well, if the barrel isnt close by, its better to use a bucket in which case, each to their own.
