Well first of all you need to the skill plant lore, then farming (check under available skill on the skills box on your character stats).

Crops in this game don't need to be watered.

Most of the crops are used as food or food product. Hemp/flax are used for plant fibre which are used for other build materials or as strings. Tobacco and hemp (harvested at a certain stage of growth) can be smoked. Hops is used for beer. I would recommend you have wikia here to look up info on crops.

Get enough LP to get farming. Then raise your exploration to 6-15 to be able to find wild windsown weeds which you dry on drying racks in which they became a seed based on the region you found it at. http://havenandhearth.wikia.com/wiki/Wild_Windsown_Weed

Alternatievly you can either ask for seeds from someone or gather them from abandoned settlements.

planting seeds affects quality? or its only harvesting them what determine the final quality obtained?

Only harvesting affects quality and quantity (belief slider). Planting has no effect. The quality of the seed harvest can be up to 5 quality lower or higher than the seed that was planted there. You want to use the higher quality seeds to replant so your quality grows with each crop generation.

Keep in mind that if your farming is lower than the resulting seed when harvest, the quality will be softcapped and the new quality of the seed will be the average of the seed and your farming rounded down.
