How to make leather ?
How to make string ? (I think with spinning wheel but I don't have a button to make a string and I have all skills)
How to take wheat ? (right click do nothing)
How to plant wheat ? (there is no seeds!)
We can't heal yourself with Gauze ?

For leather:
Kill an animal and get a hide/skin/fur. Build a drying rack and place the fur(s) inside. Wait. They will change to a 'dried' version.
Build a drying tub and fill it with water and tree bark. Place the fur inside. Wait. They will change to leather.

For string:
String is an item class that contains both plant fiber and yarn.
Harvest hemp plants to get plant fibers and shear sheep and use the wool on a spinning wheel to get yarn. Either will used as the string component.

For wheat:
You have to wait for the wheat to mature - if there aren't options to harvest, it isn't done growing yet (approx 3 ingame days without a beehive). You will get seeds when you harvest. If you don't have any to start with, look around for wild wheat, ask someone for some, or find an abandoned plot and just harvest theirs.

Not sure about the gauze yet.

I have the feeling gauze heals soft hp. If it doesn't then i'd say it's broken too. I bandage my head just for the points..

Gauze heals up to 10 HHP per unit. It just takes a lot of time. Leave it on for an hour and you'll see improvement.

Hold it, right click on a character (your own or someone else's) and choose "Treat Head" -- The character you're treating cannot wear anything on his head.

Straw is dropped on the ground as a byproduct when harvesting wheat.
