What stat should i raise to get more clay ?

the thing i that every 24h ,i can get the clay at the first digging ,then nothing till tomorrow ,so i must just all the area ?

Correct. Find a different area that will yield more than one piece of clay per day.

Are there caps on the q which better nodes can rise to? Like I know if you drop the q of a high quality node by digging it, it'll slowly come back. Will my q11 node ever be more than that?

Either apply some gauze (made from wool) with the first aid kit, or pick up some leeches by walking through a swamp. Careful with leeches, though. They drop your SHP and refill your HHP, but if your SHP drops below 0, you will be knocked out, and they won't be healing your HHP anymore. You could die from them, to be honest, so be careful.
