It's a cooking ingredient for a semidecent dex/con food. Exact value will vary from town to town, some may offer you metal for them, some might refuse to buy at all.

When you do criminal acts on personal/village claim, you leave scents. All scents except tresspassing and assault are 'summonable'. This means that someone who has collected your scents, can use your hearth fire to summon and kill you while you are offline. That's why it's a good idea to keep your HF protected. Or not to be criminal in the first place.
Tracking scents depends on ranger's perception*exploration score and criminal's intelligence*stealth. If player has high enough int*stealth, his scent's might not even be seen by someone with low per*explo.
