Protection

How protected am I from various PK-s if I am wearing Bear cape, plate armour, soldier's gaunlets, leather pants and boots and all base q?
Will I be able to deflect a few attacks and then run away or what are my chanches for survival if I meet random PK and he decides to kill me?

(never done any pvp before, just got killed a few times)

in my experience, being able to actually run away from a combat situation is rare, unless you can get to a nearby boat (and they can't) your gear plays a role in your chances of surviving, but it's more about your skill level in unarmed/melee which will give you a chance to make a stand.

the best way to avoid this is through prevention. build walls around your home, never go afk outside, don't rob or kill people, don't go nosing around in other people's villages, and don't be a dick if you do end up talking to someone. this will all help but there's nothing you can really ever do to be 100% safe at all times. it's what keeps the game interesting ;)

You say it's about skill level in unarmed/melee, I get that. But how do you fight with another player?
Is it as complicated as fighting animals (I read that combat guide here on the forum and it' complicated) or is it just spamming one move/skill/attack like using a sling?

If they use a sling run around. Aiming meter drops when aiming at a target that's moving.

Close combat versus players is the same as versus animals. So if you want to get into it, you have no other choice but to learn from dataslycers guide or testing it yourself. It is quite an interesting system once you get the hang of it and you can start learning it by fighting ants.

Marskmanship is quite useless in PvP at this point of the game. Most attackers will have good enough armor to deflect all damage from a normal bow and rangers bows just suck too much because your targets only have to take one step to drop all your aim meter.
