Crop growth times (stages?) and crop death?

OK so I planted tons of crops and have then all in the radius of multiple bee hives.

I tried to do some research but just want to be sure.

Which crops have stages where I need to let them grow a little more for better quality? I know wheat and carrots get better with additional time. Anything else get better?

Can crops die if I leave them sit too long?

I don't believe any crops actually increase quality over time. There are a couple crops that are harvestable at different growing stages, but these stages simply produce different items harvested (carrot seeds -> carrots / hemp buds -> hemp seeds) are the only 2 that I can think of off the top of my head.

Also once crops are planted they can only be removed by harvesting, so if you let them sit for 3 years and no one else touches them you can still harvest them just as if you only waited a week.

Gotcha... So to make sure I have this straight if I let carrots grow for 1.5 days RL time I get seeds? Do I get seeds upon harvesting or after I eat the carrots? Also whats the advantage of letting wheat grow longer?

I'm not sure about the growth times, but I know that carrots first harvestable stage yields seeds (which are fine if all you want to do is replant them), and then the next and final stage is plain carrots (which can be eaten or planted, but once eaten yield no seeds).

As far as I know wheat only has one harvestable stage. The "stages" of crops are most commonly just used to describe the sprite that represents how far along a crop is. Few crops are actually harvestable on anything but the final "stage".
