I've never actually tried this.. just curious, does it have to be -exactly- when they're twitching or just roughly? Seems like it would be a hassle to time it exactly every time when you're still new to the game and everything hits for low damage. But, that's a good point and I totally forgot about that, again

Even if you run out of stones, just go across the river to a nearby stone (don't go too far! if you break combat, you lose total LP gained when you finally kill it). If there are no stones nearby, lure the animal by the river first till you see a stone across the river. Sometimes boulders are close enough to the river that you can chip the stones off from within your boat, that's the best case scenario for running out of stones.
As for how many.. hmm.. well boars typically have around ~250 HP, if you're hitting for 10~50 damage, that's like 10 stones average? It's definitely not super fast or anything, but it should be possible.
I have no idea exactly the AGI of animals, I'd guess no more than 50 on most of them, though. -Maybe- bears have more, but I doubt it.
