how do i find an animal

how do i find a deer, or a sheep? or a fox? or cowe thingy?
are there any skills that increase the chance to find them?

Nope. Just go looking. Bears, Boars, and Deer spawn in forest terrains. Mouflon and Aurochs spawn in grassland, heath, and moor terrains.

are they hard to find?
i've seen some cow things and deer before, and a bear once
and boars like to attack me

They're rarer than they used to be in world 3 but are not hard to find.

Yes. This can take anywhere from a few minutes to ETERNITY so don't anticipate it happening anytime soon. Just play, enjoy, and worry about it when it's already too late, because there was nothing you could have done anyway =)
