Anyway, cows need to be pregnant before they can give milk. Put a bull in the same place as your cow for a while. The Cow article on the wiki seems to have some stats on the subject; note you'll need a lot more food for milk-producing cows, and their calves will need some of the milk.

I wasn't sure, but yeah, it seems they have to give birth before they'll start producing. (Wiki: "Heifers, cows that have not give birth yet, do not produce milk") Guess you'll have to wait a couple days.
Also, I notice the screenshot does include "milk quantity", but I think that's just the maximum capacity (not sure whether it can change; it might just be a vestigial feature).
