Can you make backpacks out of Rabbit leather?

Yes, as well as foxes, and well, anything. Rabbit fur becomes 1 leather, foxes and sheep make 2 leather, and boars and cows make 4 leather when put in a tanning bin. I'm not sure of deer or bear because I haven't killed any, but I'm gonna assume they make four leather as well.

Yes, but since you can only tan one hide at a time, you'll need 4 different tanning tubs to get enough leather for a backpack. Deers, boars, and cows give generic 4-square "skin", there doesn't seem to be any difference between them.

The difference is it will take you 4 tubs to get 4 leather with rabbits (1 tub only holds 1 fur, regardless of size). Foxes and sheep will take 2 tubs (2 leather each) and cows and boars will make 4 leather using just 1 tub.

Deer and Bear also would make 4. Deer is a generic raw hide, bear is a special one which would probably be better used for a bear cape than turning to leather.
