From another forum topic it seems that you need a crafting recipe to be able to convert a metal bar into nuggets and back again. And to unlock this recipe you need to have discovered at least one type of metal.

So from my understanding you need to have discovered any metal bar to be able to use it.

As for the market stand discovery, does a barter stand work as well? I will test this tonight after work, but curious if anybody knows in the mean time, this would be a handy trick for discovery.
