I can't give you any specific advice, since I myself is a low-tier hunter, but I mostly believe that for every N level of critters, you must have N times 10 of relevant stats and skills in order to fight them. Also, read and study the Attack and Maneuvers thread.

Base quality stone axe, 12-14 melee, base stats are enough to kill lev 1 foxes.
But you usually take heavy damage.

will leather armor of any type help any more than the starter clothes? I'm not sure how to interpret equipment stats

also can multiple people work together to hunt a single animal and hit it at the same time

Yes, leather armor will help. Basically, the 'ac' of the armor, expressed as x/y, will completely negate x amount of damage and absorb y amount of damage to its own HP instead of yours. You add up all of your equipped armor to determine your total AC. Damage over your total AC is dealt to you, and the y portion of the damage is divided evenly between all pieces of equipment, though I don't think a single piece of gear can take more than its y value from a single hit. (I'm not sure on that).

And yes, multiple hunters can attack an animal at a single time, the only limit being collision issues.
