Yes. Players trigger spawning by moving into the range of a minimap. When that map loads, items that are spawned (animals, forageables) are added. This is why animals that run off can despawn and you can cycle the forageables that appear.
No. I've seen bears and deer at the same time; a bear, foxes, and boars; etc. See answer above.
