How does idol trading work?

For travel you mean? You make a crossroad, they make one, and you exchange.
For changing Lawspeaker? Just leave the position and have someone else who's a villager take the spot.

If you mean for buying/selling, then you make an alt, load the alt up with trade goods, join their village, break his HF, warp to village. Make the exchange, leave village, join back to yours, and warp to village.

What are the usual security precautions when doing that?

Trade with trusted individuals and treasure secure partners. Never make big trades with people you haven't done trade with before in the past.
Name and reputation mean a lot.

I would palisade your idol and grab the goods at the idol with another alt if you're trading with someone you don't know :)

Scenario: Guy 1 travels, Guy 2 "receives". Both guys need a village each and characters with chieftain/LS position.

Steps:
Guy 1 makes an alt, and with his LS/chieftain character, invites him to his village.
Guy 1's alt picks up the goods he wants to trade and talks to Guy 2.
Guy 1's main char destroys the alt's hearthfire.
Guy 1's alt gets invited to Guy 2's village and travels to idol -- no travel weariness required, since he doesn't have a hearthfire.
Guy 1's alt leaves the goods on Guy 2's village, and picks up Guy 2's goods.
Guy 1's alt gets invited back to his original village and teleports to idol with the traded goods.

I probably missed a step but this is basically how it's done.
Remember to place a palisade around your idol if you're the receiver, and that you need to be "outside" in order to invite people to your village.

so you have to place the idol behind a separate palisade to trade securely?

You don't have to but I'd recommend it.

EDIT: It's an especially good idea if you're trading with new people.
