Basically there is the hard way and the easy way. It would seem that you tried the hard way by taming an aurochsen in real combat. It's much easier and convenient to build a few signposts around the whole herd and seperating two individual aurochsen in different areas. Then you build 2 roundpole fence cornerposts for each of these seperate areas and connect the CPs with a gate. Open, close and reopen the gates again and place 2 more construction signs in front of them. Now start the taming process by using the skill "call down the thunder" on one of the wouldbe cows. The whole herd will aggro you and the two seperately penned aurochsen will get stuck in the roundpole fence gate. Now you just spam call down the thunder on one of these two until you have 14 initiative and then approach him 3 times with the skill sidestep (to gain 3 advantage). Only do this after he tried to move because this will force him to recalculate the path and in that short time span you can use the skill without the risk of getting attacked. So... use the skill, back up, use the skill again, etc.. Now you just use "consume the flames" on him to reduce combat intensity to zero and afterwards "quell the beast". That should give him 20 tameness points and the combat will end for a while. Do not attack him now because he will try to kill you again on his own (otherwise he will lose the tameness points again). Instead tame the second aurochsen while the first one is peaceful to reduce the waiting time and actually return home with 2 cows instead of one. Once the aurochsen reach 100 tameness points they turn into cows in a (I believe pink) poofy cloud. Taming two aurochsen at once requires two ropes equipped. Don't forget that. And also make sure you are at full SHP when starting the taming because "consume the flames" will cost you hit points after each use.
It is of course also possible to use other skills but this is probably the easiest way to do it.
