Both my characters are very new, so I don't know if the option is available yet, but how do you skin before you butcher a rabbit?

You don't. Rabbits just give you their fur when you butcher them. So wring its neck and butcher away! You only need to begin skinning once you start finding/killing foxes, boars, bears, mouflons, or aurochs.
