Will they hatch into moths in the herbalist tables? Or would stay as cocoons? Where would they stay unhatched if there's a place that they will not hatch in?

A cocoon will turn into a random gender moth after a certain amount of time, no matter where it is. You can boil it in a cauldron to turn it into a silk filament if you don't want it to turn into a moth.
